Measured taquitos at 124F and hot dogs at 120F on hot holding unit. Per PIC, the food items were heated one hour before in the oven. The temperature for hot holding unit was maintained on low and one was turned off. [CA] PHFs shall be held at 41°F or below or at 135°F or above. [COS] PIC adjusted the timers to so that PHFs are maintained at 135F or above.
