Equipment, utensils, linens: Proper storage and use
1. 2 pressurized cylinders in walk-in cooler not chained to rigid structure. All other cylinders were chained. [CA] All pressurized cylinders shall be securely fastened to a rigid structure. 2. Tongs for self service stored on open plate, not protected from contamination. [CA] Multi-use utensils will be stored in a way that the working part of the utensil may not become contaminated and only handle is touched (ex. clean cylindrical container with handle up).
Equipment, utensils, thermometers, cutting boards, or single-use items were not in good condition, not the right type, or not stored properly.
