Proper hot and cold holding temperatures
Measure almond milk on counter at 56F. [CA] Maintain potentially hazardous food 41F and below. [COS] Milk will be discarded at shift change within 4 hours. If you choose to use time as a public health control, provide written procedures for review and use a time marking system. Milk shall be discarded after 4 hours form the time it was removed from the refrigerator. TPHC handout provided.
Food was not kept cold enough, hot enough, cooled fast enough, or cooked or reheated to the right temperature. Bacteria grow quickly in the "danger zone" between 41°F and 135°F, which makes this one of the most important food-safety checks.
