Inside the upright hot holding unit in the rear kitchen: measured internal temperature of cooked chicken and barbacoa beef to be 120 - 125F. PIC stated the food had been cooked at 10am today (approximately 90 minutes prior) and then placed inside the unit. Observed the unit had been switched off/to the wrong setting (unintentionally, per PIC). [CA[ Keep potentially hazardous foods at 135F and above or 41F and below. [COS] Chicken and beef were immediately reheated, and the hot holding unit was switched back on.
