Measured a full, covered and stacked container of cooked diced chicken in 3 door upright unit at 55F. Per chef, the chicken was sliced this morning. [CA] After prepping, cool food down uncovered and do not stack containers. Once food has cooled to 41F, food may be covered. [COS] Chicken transfered to additional containers to cool down.
