Proper hot and cold holding temperatures
Salad prep cooler measured to have: -Chickpeas at 51F -Shredded cheese at 56F -Quinoa at 52F -Corn and bean salsa at 54F Items observed to be double container inside prep cooler inserts. Small container of each item was stacked in a larger plastic bin. Other PHFs in prep cooler measured to be 41F and below(see measured observations). [CA] PHFs shall be held at 41°F or below or at 135°F or above. [COS] Per employee all items were stocked at the beginning of lunch out 1 hour ago. All PHFs in double stacked containers were moved to be directly in prep cooler inserts.
Food was not kept cold enough, hot enough, cooled fast enough, or cooked or reheated to the right temperature. Bacteria grow quickly in the "danger zone" between 41°F and 135°F, which makes this one of the most important food-safety checks.
