The PHFs are subject to time control, but were not time marked and not discarded after being in the temperature danger zone for more than 4 hours. [CA] PHFs utilizing time as a public health control (TPHC) shall be time-marked for 4 hours and discarded within 4 hours from the point in time when food is removed from temperature control. [COS] PIC voluntarily discarded 3 bagel dogs.

Observed potentially hazardous foods located in the food prep cold hold unit that measured in the temperature danger zone (sausage above the chill line measured at 48F). Per staff, the sausage was recently loaded into the unit. {CA] Keep PHFs properly cold held at 41F or below OR hot held at 135F or above. Keep PHFs below the chill line; do not overfill. [COS] PIC had staff relocate the overflow of PHFs to another refrigerator.
