Measured sliced tomatoes at 48 F within the upper portion of the cook line preparation refrigerator (directly next to belt toaster). [CA] PHFs shall be held at 41°F or below or at 135°F or above. Keep preparation refrigerator closed at all times when not in use. [COS] Lids to the unit closed.
