Raw shelled eggs were measured between 45-55F in the open air egg case cooler. Per PIC, they received eggs today. [CA] PHFs shall be held at 41°F or below or at 135°F or above. [COS] Eggs were moved further into the cooler to cool down. Ambient air of the cooler in the back was measured at 40F. Ambient air of the cooler towards the front measured at 59F.
