The following PHFs were measured at improper holding temperatures :
Held inside the walk in refrigerator measured between 47F and 48F : Tofu, Turkey slices, Beef, Ground meat.
Held inside left upright refrigerator measured between 45F and 48F : Shredded cheese, Cream cheese, Yogurt, milk.
Ambient temperature inside the walk in measured at 51F.
Per kitchen manager, both refrigeration units are not capable of maintaining the temperature at 41F or below during working hours.
[CA] PHFs shall be held at 41°F or below or at 135°F or above.
[COS] Kitchen manager relocated all PHFs to a different refrigerator temporarily while both refrigeration units are getting repaired.
