Observed drain hose from ice machine extends into the floor sink [CA] Drain lines must be at least 1" above the floor sink or at a height twice the diameter of the drain in order to prevent backflow

The food facility shall cease operation of the food facility immediately. The food facility shall remain closed until: there is no longer evidence of a vermin infestation; all contaminated surfaces have been cleaned and sanitized; and contributing factors such as cleaning, repairs, and the elimination of harborages have been resolved. The kitchen shall not be used for any food preparation. The school must provide other alternatives sources of food for the students. Contact the district inspector for any follow-up inspection.

Proper hot and cold holding temperatures
The turkey and ham sandwich stored on the upright oven was measured at 120 oF. [CA] All potentially hazardous foods like garlic in oil, cut melons, raw sprouts; cooked foods of plant origin; foods of animal origin and any other food capable of supporting the rapid and progressive growth of infectious or toxigenic microorganisms or the slower growth of Clostridium botulinum shall always be held at 41°F or below or at 135°F or above. The PIC said all the food products shall be discarded after 1:00 pm. However, there is not time/temperature logs. Please use appropriate time/temperature logs if the food is going to be stored outside the safe temperature zone. All leftover food products were discarded (COS).
Food was not kept cold enough, hot enough, cooled fast enough, or cooked or reheated to the right temperature. Bacteria grow quickly in the "danger zone" between 41°F and 135°F, which makes this one of the most important food-safety checks.
