minorCode K34Cleaning and sanitizing

Official wording

Warewash facilities: installed/maintained; test strips

Inspector’s notes

Facility lacks a method for testing the high temperature sanitizing rinse of the mechanical dishwasher. [CA] Testing equipment and materials shall be provided to adequately measure the applicable sanitization method used during manual or mechanical warewashing.

In plain English

Dishes, equipment, or surfaces that touch food were not properly washed, rinsed, and sanitized, or sanitizer was not at the right strength. Clean surfaces help stop germs from spreading to food.

minorCode K23Pests

Official wording

No rodents, insects, birds, or animals

Inspector’s notes

Accumulation of rodent droppings on the floor underneath/behind the grease trap, underneath the three compartment sink, underneath the mechanical dishwasher, and underneath the Cambro holding box. Most of the droppings observed to be old/dried. *Note: Rodent trap observed on the floor underneath the handwash sink. Facility is serviced monthly by Terminex. Pest control report provided for review. [CA] Clean and sanitize area of dead cockroaches or old droppings.

In plain English

The inspector found mice, rats, cockroaches, flies, or evidence of them (like droppings) inside the business, or conditions that could attract them. Pests can spread bacteria to food and surfaces, so this is treated as one of the more serious findings.

minorCode K35Equipment and utensils

Official wording

Equipment, utensils: Approved, in good repair, adequate capacity

Inspector’s notes

Grab and go cooler does not maintain PHFs at or below 41F. [CA] Refrigeration must be capable of maintaining PHFs at 41°F or below. Note: Defrost cycle of grab and go cooler appears to be prolonged due to condensation from top of cooler. Thermometer in grab and go cooler is reading about 48F. Dishwashing machine does not appear to be working properly. Foam from soap does not drain after dishwasing cycle is complete. Two door upright cooler is leaking. Accumulation of water in container stored in cooler to collect leaking water. [CA] Equipment and utensils shall be designed and constructed to be durable and retain characteristic qualities under normal use conditions.

In plain English

Equipment, utensils, thermometers, cutting boards, or single-use items were not in good condition, not the right type, or not stored properly.

criticalCode K07Food temperature

Official wording

Proper hot and cold holding temperatures

Inspector’s notes

Measured hard boiled eggs at 47F, fruit salad at 47F, and chicken at 46F in grab and go cooler. Food was placed into cooler before 8AM. [CA] PHFs shall be held at 41°F or below or at 135°F or above. [COS] Food was voluntarily discarded.

In plain English

Food was not kept cold enough, hot enough, cooled fast enough, or cooked or reheated to the right temperature. Bacteria grow quickly in the "danger zone" between 41°F and 135°F, which makes this one of the most important food-safety checks.
