1. Light fixture button for the walk in is damaged at the time of inspection. [CA] Equipment and utensils shall be designed and constructed to be durable and retain characteristic qualities under normal use conditions. 2. Compressor for the walk in freezer is leaking at the time of inspection. [CA] Equipment and utensils shall be designed and constructed to be durable and retain characteristic qualities under normal use conditions. Have unit serviced.

High temperature dish washer was measured at 111*F at the time of inspection. Active ware-washing taking place at the time of inspection. [CA] Mechanical sanitization shall be accomplished in the final sanitizing rinse by achieving a utensil surface temperature of 160°F (or manufacturer's instruction). [SA] Facility will be using the dish washer to wash equipment and then using the 3-compartment sink to sanitize equipment. All equipment that was used in the dish washer recently must be re-washed.

Large hold on the ceiling noted within the dry storage area. Per PIC, they had a leak in that area and contractor is making repairs. [CA] Ceilings of all rooms where non prepackaged food is handled shall be smooth, of durable construction, and of nonabsorbent material that is easily cleanable.
