Measured chimichurri at 54 F within covered bowls in the two door reach in refrigerator. PIC stated that the chimichurri was prepared less than 1 hour prior. [CA] When cooling PHF's, food may be left uncovered or loosely covered to allow rapid cooling. [COS] Chimichurri placed within the blast chiller for rapid cooling.
