minorCode K23Pests

Official wording

No rodents, insects, birds, or animals

Inspector’s notes

Observed several dead American cockroaches under the 2-compartment sink and several dead ones in the monitoring traps. [corrective action] Eliminate cockroaches from this facility. Remove the dead cockroaches and sanitize the impacted areas. Note: This facility receives monthly treatment from Banner Pest Services. The last report dated 02/27/2026 noted small amount of insect activity. Consult with the pest control company for treatment of cockroaches.

In plain English

The inspector found mice, rats, cockroaches, flies, or evidence of them (like droppings) inside the business, or conditions that could attract them. Pests can spread bacteria to food and surfaces, so this is treated as one of the more serious findings.

minorCode K07Food temperature

Official wording

Proper hot and cold holding temperatures

Inspector’s notes

Santa Fe chicken salad in the insulated box measured 46F to 48F. [corrective action] Maintain potentially hazardous foods at 41F or below. [correction] Salads were moved to the 2-door reach-in cooler. Note: Per log, salads were delivered by Lunch Master this morning at 6:40 AM and measured 39F.

In plain English

Food was not kept cold enough, hot enough, cooled fast enough, or cooked or reheated to the right temperature. Bacteria grow quickly in the "danger zone" between 41°F and 135°F, which makes this one of the most important food-safety checks.
