The right half of the front preparation cooler was unable to maintain PHF at or below 41F. Multiple areas of the cooler were scanned via IR and the right side of the unit generated a minimum temperature of 47F. [CA] Refrigeration must be capable of maintaining PHFs at 41°F or below.

Measured the following foods in the front preparation cooler: - Chicken salad at 47F - Egg salad at 47F - Tuna salad at 47F The PIC noted that the above items were placed in the cooler approximately 2 hours prior. [CA] PHFs shall be held at 41°F or below or at 135°F or above. [COS] The above items were relocated to the walk in cooler.
