Time as a public health control; procedures & records
Observed potentially hazardous food that measured in the temperature danger zone located on the cooling rack (pizza 66F). According to employees, the pizzas are premade and put on the rack for approximately 40 minutes and then discarded if not ordered. Employees did not have any timers set to track the time the PHFs are sitting in the temperature danger zone. [CA] Ensure PHFs that are subject to time control are time marked and discarded within 4 hours. [SA] PIC will discard within 40 minutes.
