Proper cooling methods
Measured whole beans at 53 F within a deep, covered plastic container in the walk in refrigerator. PIC stated that the beans were removed from a can and began cooling 1 hour prior. [CA] Properly store chilling foods in such a way to allow proper air flow. Cool foods using approved containers which facilitate heat transfer, such as metal. [COS] Beans placed within the blast chiller to facilitate rapid cooling.
Food was not kept cold enough, hot enough, cooled fast enough, or cooked or reheated to the right temperature. Bacteria grow quickly in the "danger zone" between 41°F and 135°F, which makes this one of the most important food-safety checks.
