Proper hot and cold holding temperatures
Observed potentially hazardous foods that measured in the temperature danger zone located in the ice bins and in the walk-in cooler. The seafood in the ice bins were stacked very high and not in contact with ice. Per PIC, the walk-in cooler broke today and is currently being repaired. Observed produce, frozen meat and seafood, and 2 large bags of oysters in the walk-in cooler. [CA] Ensure PHFs are properly cold held at 41F or below OR hot held at 135F or above (oysters may be held at 45F or below). Repair, adjust or replace units if necessary. Discontinue using walk-in cooler for cold holding PHFs until repaired and able to properly cold hold. Discontinue stacking PHFs in the ice binds. [COS] PIC voluntarily discarded oysters and clams.
Food was not kept cold enough, hot enough, cooled fast enough, or cooked or reheated to the right temperature. Bacteria grow quickly in the "danger zone" between 41°F and 135°F, which makes this one of the most important food-safety checks.

[CA] Shellstock tags shall remain attached to the container in which the shellstock are received until the container is empty and shall be maintained for 90 calendar days from date of harvest. Food in good condition, safe, unadulterated
Observed a gray round spot on a piece of raw beef chuck behind the display case. Per PIC, water drops from inside the unit on the meat during the defrost cycle resulting in meat discoloration. Specialist did not observe active water dropping inside unit at time of inspection. [CA] Food is adulterated if it bears or contains any poisonous or deleterious substance that may render it impure or injurious to health and shall be discarded immediately. [COS] piece of meat was voluntarily discarded by PIC - see VC&D
Food was stored or handled in a way that could let germs or other material get into it, such as raw meat stored above ready-to-eat food or uncovered food. Cross-contamination is a common cause of foodborne illness.

No labeling observed for the prepackaged raw chicken in the meat merchandiser unit. Observed other meat product labels without the name and address of facility. [CA] Food prepackaged in a food facility shall bear a label with the following: 1) common name of the food, 2) list of ingredients in descending order of predominance by weight, 3) quantity of contents, 4) name and place of business of the manufacturer, packer, or distributor.
