Official wording

Time as a public health control; procedures & records

Inspector’s notes

Employee stated pizza that is left out for 2 hours (on timer) at front display counter is re-sold at a discounted price on the Pizza My Heart App within a certain time frame. Observed ~6 boxes of pizza in walk in cooler labeled 'morning pizza.' Morning pizza is leftover pizza from the day prior, sold as breakfast pizza. [CA] Food that is on TPHC (time as a public health control) must be cooked and served, served if ready-to-eat or discarded within four (4) hours. Food cannot be donated, reheated, refrigerated, cooled, or reconstituted. [COS] Employee discarded morning pizza boxes in trash. Contact this inspector re: this process.

Inspector’s notes

Interior metal panel at large ice machine noted with mold like debris. [CA] Clean the panel 1 x week.

In plain English

criticalCode K07Food temperature

Official wording

Proper hot and cold holding temperatures

Inspector’s notes

Measured 2 containers of pizza sauce on pizza prep table between 55F-60F. [CA] Maintain potentially hazardous food 41F and below or 135F and above. Recommend to locate sauce on top insert of prep unit. [COS] Sauce was placed back in unit.

In plain English

Food was not kept cold enough, hot enough, cooled fast enough, or cooked or reheated to the right temperature. Bacteria grow quickly in the "danger zone" between 41°F and 135°F, which makes this one of the most important food-safety checks.

minorCode K29Chemicals

Official wording

Toxic substances properly identified, stored, used

Inspector’s notes

Several unlabeled spray bottles with a clear- yellow liquid. [CA] Label all chemical/non chemical spray bottles with common name.

In plain English

Cleaning products, pesticides, or other chemicals were stored or labeled in a way that could let them get into food. This is serious because chemical contamination can make people sick quickly.
