Measured cut watermelon in the self-service tray from 43-48F. Per PIC, cut watermelon was transferred from the upright cooler to the self-service tray at ambient temperature less than 30 minutes prior to temperature measurement. [CA] Potentially Hazardous Foods shall be kept at 41F or below or 135F or above. [SA] Watermelon will be discarded at the end of lunch services (less than 4 hours since removal from temperature control). Recommend for facility to keep watermelon in ice bath or tray during service period.
