Proper hot and cold holding temperatures
Inspector’s notes
Held inside chest refrigerator for about 2 hour per PIC: milk teas measured between 46F and 48F. Held inside countertop cold holding unit (less than 4 hours): fruit jelly and egg pudding measured above 50F. Ambient temperatures in both refrigeration units measured below 41F. [CA] PHFs shall be held at 41°F or below or at 135°F or above. [COS] PIC put a time marking to discard within 4 hours from removal of temperature control.
In plain English
Food was not kept cold enough, hot enough, cooled fast enough, or cooked or reheated to the right temperature. Bacteria grow quickly in the "danger zone" between 41°F and 135°F, which makes this one of the most important food-safety checks.
