Hot and cold water available
Water at the only handwash station reached a maximum of 80°F before dropping again. [CA] Handwashing facilities shall be equipped to provide minimum 100°F water under pressure for a minimum of 15 seconds.
The business had issues with hot or cold running water, plumbing, drains, backflow prevention, or sewage disposal. Some of these, like no hot water, can force a temporary closure until fixed.
More about water, plumbing, or sewage problemsProper hot and cold holding temperatures
1. Sausages in the undercounter cooler measured between 120-130°F. Per chef, they had been cooked about an hour prior. 2. Garlic in oil sauce measured at around 120°F on an induction burner at around 1:30 pm. Per chef, it had been there for about 2 hours and would be there until 5pm. [CA] PHFs shall be held at 41°F or below or at 135°F or above. [COS] 1. Chef instructed cook to reheat sausage to 165°F. [COS] 2. Sauce was placed on TPHC to discard at 3pm. Chef instructed kitchen staff to make more sauce for later service.
Food was not kept cold enough, hot enough, cooled fast enough, or cooked or reheated to the right temperature. Bacteria grow quickly in the "danger zone" between 41°F and 135°F, which makes this one of the most important food-safety checks.

If replacing with sheet vinyl flooring ensure it is installed continuous and have heat welded seams or be chemically sealed, and be smooth and impervious to water, grease, and acid.
Dishes, equipment, or surfaces that touch food were not properly washed, rinsed, and sanitized, or sanitizer was not at the right strength. Clean surfaces help stop germs from spreading to food.

Note: Facility has permanently installed sneeze guards that appear to have been modified to allow for self - service. [CA] Food on display shall be protected from contamination by the use of packaging, counter, service line, or sneeze guards that intercept a direct line between the consumer's mouth and the food being displayed, containers with tight-fitting securely attached lids, display cases, mechanical dispensers, or other effective means.
Food was stored or handled in a way that could let germs or other material get into it, such as raw meat stored above ready-to-eat food or uncovered food. Cross-contamination is a common cause of foodborne illness.
