Measured sanitizer in dish machine at 0 ppm. Observed quaternary ammonium sanitizer attached to the dish machine, orange residue inside the dish machine. Observed washed dishes in the dish machine. Dish machine needs chlorine sanitizer as per manufacturer instructions. [CA] Maintain chlorine in mechanical warewash machine at 50 PPM. [COS] Discussed with employee to sanitize dishes manually.
