Proper hot and cold holding temperatures
Cooked ground pork measured at 62 F stored on a rack outside of the walk in refrigerator. PIC stated the rack was removed 2 hours prior to make space in the walk in refrigerator. Reviewed cooking and cooling logs from the day prior. [CA] PHFs shall be held at 41°F or below or at 135°F or above. [COS] Pork Reheated to 165 F and to be cooled to 41 F or below utilizing the blast chiller. Cooked noodles and potatoes stored on a rack at room temperature adjacent to the cook line. PIC stated the items were removed from temperature control 1 hour prior. [CA] PHFs shall be held at 41°F or below or at 135°F or above. [COS] Noodles and potatoes placed on TPHC and time marked with a color sticker.
Food was not kept cold enough, hot enough, cooled fast enough, or cooked or reheated to the right temperature. Bacteria grow quickly in the "danger zone" between 41°F and 135°F, which makes this one of the most important food-safety checks.
