Boba in the back of the facility is not time marked at the time of inspection. Per PIC, the boba was made at 12PM and it is now 4PM. [CA] When time only, rather than time and temperature is used as a public health control, PHFs shall be time marked to indicate when item is removed from temperature control, discarded if not consumed or served within 4 hours, and written procedures shall be readily available for review. Submit TPHC form to the department for approval. [SA] Food was VCD by PIC.

[CA] PHFs shall be held at 41°F or below or at 135°F or above. [SA] Facility will place items under TPHC until unit is serviced.
