Except during preparation, cooking, cooling, hot holding, or when time is used as the public health control time/temperature control for safety food shall be maintained at 41 degrees f or less. Education provided that milk can be kept in an ice bath ot time can be used as a public health control. Milk put back in the cooler at the time of inspection because it had been out for less than 2 hours.
