4-501.114 Manual and Mechanical Warewashing Equipment, Chemical Sanitization-Temperature, pH, Concentration and Hardness (P) The low temp chlorine dish machine was observed to be sanitizing food contact surfaces at at 0ppm chlorine sanitizing solution. A chemical SANITIZER used in a SANITIZING solution for a mechanical operation shall be used in accordance with the EPA-registered label use instructions, which require chlorine to be present at a concentration of 50ppm. Inspection of the unit revealed that chlorine sanitizing solution was empty. Sanitzing solution was then replaced by person in charge. The hose was then primed with sanitizer for 2 minutes. Machine was then re-run and tested at 50ppm chlorine. Test sanitizer concentration with chlorine strips frequently and ensure line is primed. Education provided.

3-501.16(A)(2) Time/Temperature Control for Safety Food, Hot and Cold Holding (P) One hotel pan of rice and one hotel pan of cooked chicken were observed in the back up steam table hot holding at 119°F and 104°F respectively. The steam table was off. Except during preparation, cooking, or cooling, TIME/TEMPERATURE CONTROL FOR SAFETY FOOD shall be maintained: (1) At 135°F or above, or (2) At 41ºF or less The rice and cooked chicken were cooked day of inspection and placed in the steam table within 2 hours of observation. Rice and chicken were moved to the oven and reheated to 165°F rapidly as confirmed by thin probe thermometer. Chicken and rice were then put back into steam table that was turned on and hot holding at 140°F. Education provided.
