OBSERVATION: (CORRECTED DURING INSPECTION) 3-501.16(A)(1) Time/Temperature Control for Safety Food, Cold Holding Observed Yogurt, hummus and cheese in the front display cooler holding at 48ºF. (A) Except during preparation, cooking, or cooling, TIME/TEMPERATURE CONTROL FOR SAFETY FOOD shall be maintained a 41°F or less. Person in charge removed items from cold holding unit and voluntarily discarded items. Will store TCS items in the reach-in refrigerator that is properly holding temps until unit has been serviced and is holding at 41°F or less.
