4-204.117 - The mechanical ware washing machine is not meeting the required hot temperature of 180F to sanitize properly. A ware washing machine that is installed after the adoption of this Code by the regulatory authority shall be equipped to automatically dispense detergents and sanitizers or meet the required 180F hot temperature to sanitize properly. Talked to the kitchen manager and she stated the washing machine has not been sanitizing since the last inspection. They are manually sanitizing dishes as needed.
