3-501.15(A). Cooling methods. Observed cooled eggs in deep containers filled with the lids on and condensate on the lids. Observed large plastic container 4-5 rows deep with cooling, wrapped burritos at 63* aftre 3 hours (within range). To facilitate cooling consider using longer, shallow pans so that the cooling items are not more than 2 inches deep and make sure lids remain off items until food is at 41*F.
