3-302.11 Packaged and unpackaged storage to avoid cross-contamination. Observed raw beef patties being stored inside the reach-in cooling unit above ready-to-eat foods such as sauces and fresh produce. Food shall be protected from cross-contamination by separating raw animal foods from ready-to-eat foods by separating during storage. Talked to the kitchen manager. She stated that the delivery person placed the raw beef patties in the reach-in cooling unit. We will talk to Yuri to ensure delivery staff know to never place raw animal foods above ready-to-eat foods.
