3-501.16(A)(2) Time/Temperature Control for Safety Food, Hot and Cold Holding (P) Observation: Packaged watermelon and cantaloupe are stored between 45-47°F in the fruit display cooler near the flowers. Observed Litehouse feta cheese at 50°F in the cheese display cooler by the deli. Code Citation: Except during preparation, cooking, or cooling, or when time is used as the public health control, TCS foods shall be maintained at 41 deg F or less. Correction: Packaged watermelon and cantaloupe were relocated to the walk-in cooler for rapid cooling. The feta cheese was voluntary discrded. Education provided.
