Center island display cooler holding various deli prepared cooked items at 45*F-51*F. Except during preparation, cooking, cooling, hot holding, or when time is used as the public health control time/temperature control for safety food shall be maintained at 41 degrees f or less. Deli cheese to be not stacked so high out of containers and possibly taken out of plastic bags to help keep in cold. Center island food discarded and manager to monitor temperatures and call for repair.
