3-501.16(A) Time/Temperature Control for Safety Food, Hot and Cold Holding(P) Opened oat and almond milks were observed cold holding at 54°F outside of temperature control under the espresso machine. TIME/TEMPERATURE CONTROL FOR SAFETY FOOD shall be maintained: (1) At 135°F or above or (2) At 41°F or less Milks moved to the cooler by person in charge. To maintain cold holding temperatures of 41°F and under, all milks must be stored under refrigeration after they are opened. Education provided.
