Potatoes were reheated and the warmer was turned up. Observed raw salmon, half & half, gravy, and cooked potatoes at 43F in banquet walk-in. Cold hold PHF at 41F or below. Service walk-in and send inspector proof of repair. Comply in 48 hours. Observed tuna salad and raw shrimp at 43F in prep fridge, Hold food at 41F. Monitor temp and adjust temp as needed.
