Los alimentos no se mantenían lo suficientemente fríos o calientes, no se enfriaban con la rapidez necesaria, o no se cocinaban o recalentaban a la temperatura correcta. Las bacterias crecen rápido en la "zona de peligro" entre 41 °F y 135 °F (5 °C a 57 °C), por lo que esta es una de las revisiones de seguridad alimentaria más importantes.

Nota del inspector (en inglés): At the hotbox, buffalo chicken wings measured between 119F - 130F. Per PIC, food items were reheated then relocated to hot box less than 30 minutes prior to measurement. On the hot roller, buffalo chicken rollers measured between 123F - 130F. PIC stated food items have been in the hot roller for less than an hour prior to measurement. [CA]: Potentially Hazardous Food shall be hot held at 135F or above at all times. [COS]: All food items were reheated. PIC increased heat settings of hot roller.
