Los alimentos no se mantenían lo suficientemente fríos o calientes, no se enfriaban con la rapidez necesaria, o no se cocinaban o recalentaban a la temperatura correcta. Las bacterias crecen rápido en la "zona de peligro" entre 41 °F y 135 °F (5 °C a 57 °C), por lo que esta es una de las revisiones de seguridad alimentaria más importantes.

Nota del inspector (en inglés): Observed potentially hazardous foods located in the food prep cold hold unit and hot holding on the cookline that measured in the temperature danger zone (sliced tomatoes 52F, chili 116F). [CA] Ensure PHFs are properly cold held at 41F or below OR hot held at 135F or above. Repair, adjust or replace unit if necessary. [COS] PIC time marked the tomatoes and other PHFs in the unit for 4 hours total; PIC had staff reheat the chili to 165F.
