Los alimentos no se mantenían lo suficientemente fríos o calientes, no se enfriaban con la rapidez necesaria, o no se cocinaban o recalentaban a la temperatura correcta. Las bacterias crecen rápido en la "zona de peligro" entre 41 °F y 135 °F (5 °C a 57 °C), por lo que esta es una de las revisiones de seguridad alimentaria más importantes.

Nota del inspector (en inglés): Potentially hazardous foods measured at improper holding temperatures. Inside the upright reach-in cooler, cooked sausages measured at 58F. On the service live, cooked chicken hot holding on the warmer was measured at 128F. [CA] Potentially hazardous foods when cold holding shall be held at or below 41F; when hot holding shall be held at or above 135F. [COS] Employee discarded the sausages. The chicken was return to the oven and reheated to 165F.
