Chef stated that cold corn was mixed with cooked chicken and then returned to the warmer. [CA] PHFs shall be held at 41°F or below or at 135°F or above. Reheating for hot holding shall be done rapidly, and the time the food is between 41°F and 165°F shall not exceed two hours. [COS] Corn and chicken reheated to 165 F and returned to the warmer.
