Los alimentos no se mantenían lo suficientemente fríos o calientes, no se enfriaban con la rapidez necesaria, o no se cocinaban o recalentaban a la temperatura correcta. Las bacterias crecen rápido en la "zona de peligro" entre 41 °F y 135 °F (5 °C a 57 °C), por lo que esta es una de las revisiones de seguridad alimentaria más importantes.

Nota del inspector (en inglés): The chicken in the warmer was at approximately 115 degrees F. [CA] The warmer must hold at 135 degrees F and above. It is set to the highest setting at 200ppm F. [COS] The chicken was put back into the oven at 165 degrees F.
Seems that the unit is not working properly and needs to be replaced.

Nota del inspector (en inglés): In the 2 door upright refrigerator, bag of brown rice measured at 65F. Per operator, brown rice was stored in the refrigerator less than 2 hours prior for rapid cooling.
[CA] Properly cool PHF's using shallow containers, using no more than 2 inches for solid foods and no more than 4 inches for liquids.
When cooling PHF's, food may be left uncovered or loosely covered to allow rapid cooling. Ensure food is properly stored in the refrigerator to allow proper air flow.
[COS] Brown rice was transferred to a shallow pan and placed on top shelf of refrigerator for rapid cooling.
