- Octopus at 49F
- Ceviche at 50F

The person in charge stated that the foods were placed in the cold top preparation inserts approximately 30 minutes prior. The cold preparation cooler was observed turned off at the beginning of this inspection.
[CA] PHFs shall be held at 41°F or below or at 135°F or above.
[COS] The violation was corrected by relocating the foods to the walk in cooler to cool to 41F.
2. Measured one container of sour cream set at ambient temperature at the preparation line at 52F. The food worker stated that the sour cream was removed from the cooler approximately 15 minutes prior.

1. Observed a container of broth containing cooked tomatoes, shrimp bouillon, chiles, and other spices in the preparation sink set to cool in an ice bath. The broth measured at 101F and the person in charge stated that the broth was cooked and cool approximately 4 hours prior.
[CA] After heating or hot holding, Potentially Hazardous Foods (PHFs) shall be cooled rapidly from 135°F to 70°F within 2 hours and from 70°F to 41°F within 4 hours. Approved cooling methods include: 1) Placing the food in shallow pans 2) Separating the food into thinner or smaller portions. 3) Using rapid cooling equipment (Ex. blast chiller) 4) Using containers that facilitate heat transfer (ex. stainless steel) 5) Adding ice as an ingredient. 6) Using ice paddles 7) Using an ice bath and stirring frequently 8) Accordance with a HACCP plan. Cooling foods shall have enough space around the containers for cold air to circulate, be loosely covered, or uncovered and stirred as frequently needed to evenly cool.
[COS] The violation was corrected by voluntarily discarding 15 L of broth.
*Minor Violation*
Observed one covered deep metal container of cooked beef measured at 89F and one covered deep metal container of cooked chicken at 83F in a melted ice bath at the back preparation table. The person in charge stated the foods were cooked and started the cooling process less than one hour prior.
[CA] Properly cool PHF's using shallow containers and food may be left uncovered or loosely covered to allow rapid cooling. When cooling PHF's, stir frequently to facilitate rapid cooling.
[COS] The chicken and beef were submerged in an ice bath with water added to facility rapid cooling. - Menor Problemas de agua, plomería o drenaje
