Reviewed pest control reports for service last night. Kitchen has been cleaned and sanitized except for some areas (inside refrigeration equipment, unused sinks etc.). Repairs to tiling and holes are in progress. [CA] Facility will remain closed and a second charged follow up inspection will occur to reopen facility. Prior to follow up inspection, please ensure that all cleaning is complete, repairs have been made and if pest control services are received again, submit report to district inspector prior to second follow up inspection.

Approved cooling methods include: 1) Placing the food in shallow pans 2) Separating the food into thinner or smaller portions. 3) Using rapid cooling equipment (Ex. blast chiller) 4) Using containers that facilitate heat transfer (ex. stainless steel) 5) Adding ice as an ingredient. 6) Using ice paddles 7) Using an ice bath and stirring frequently 8) Accordance with a HACCP plan.
