Nota del inspector (en inglés): There was no functional thermometer inside of the meat products display case . [CA] To monitor the ambient air temperature of the units, please install a functional thermometer on all refrigeration units.
Redacción oficial (en inglés): No rodents, insects, birds, or animals
Nota del inspector (en inglés): Couple of houseflies were observed in the meat department and produce display areas. [CA] Eliminate vermin from the facility by a legal method.
Redacción oficial (en inglés): Wiping cloths: properly used, stored
Nota del inspector (en inglés): Couple of wet/soiled wiping cloths were stored on the counters. [CA] Wet/soiled wiping cloths must be stored in a bucket that has standard sanitizer concentration in between use which is 200 ppm quaternary ammonia or 100 ppm chlorine (bleach).
Redacción oficial (en inglés): Food properly labeled and honestly presented
Nota del inspector (en inglés): Some individually packaged products packaged in the facility but stored on the self-serve area do not have any label. [CA] Food prepackaged in a food facility shall bear a label that complies with the labeling requirements prescribed by the Sherman Food, Drug, and Cosmetic Law, Part 5 and label information shall include: 1. The common name of the food 2. If made from two or more ingredients, a list of ingredients in descending order of predominance by weight, including a declaration of artificial color or flavor and chemical preservatives, if contained in the food. 3. An accurate declaration of the quantity of contents. 4. The name and place of business of the manufacturer, packer, or distributor.
Redacción oficial (en inglés): Demonstration of knowledge; food safety certification
Nota del inspector (en inglés): There is not a food safety manager certified person in the facility. [CA] Someone from the facility must take a food safety certificate class within two months and keep a copy of the certificate on file. Food Safety Manager certificate class may be taken on the following websites: 1. Premier Food Safety: https://www.premierfoodsafety.com/food-manager-certification/california\ 2. Learn 2 Serve: https://www.360training.com/learn2serve/food-safety-manager/California 3.
Redacción oficial (en inglés): Proper hot and cold holding temperatures
Nota del inspector (en inglés): Dived watermelon were stored at room temperature on the produce storage area. The site manager said all the food products should be discarded after 1:30 pm. However, there is no time/temperature logs. Please use appropriate time/temperature logs if the food is going to be stored outside the safe temperature zone.
Redacción oficial (en inglés): Toxic substances properly identified, stored, used
