[CA] Manual warewashing shall be accomplished by using a three-compartment sink where the utensils are first precleaned, washed with hot soapy water, rinsed with hot water, sanitized with an approved method, and air dried. Use 1 TBS of bleach (5.25%) per 1 gal. of water for chlorine solution (100 PPM). Use 1 tbs of quaternary ammonium (10%) per 2 gal. of water for quaternary ammonium (200 PPM).
[COS] Staff sourced chlorine from a neighboring facility. A chlorine solution measured at 100 PPM was made and dishes were sanitized. - Crítica Alimentos a una temperatura insegura

Nota del inspector (en inglés): 1. Mashed potatoes in a bus tub with the cover on were found in the upright cooler measuring at 48F in the center and 40-48F around the er staff, they were cooked and cooled yesterday.
2. Boiled potatoes were found stored on the prep table measuring between 100-115F at 3pm. Per staff, they boiled them at 10:30 am.
[CA] After heating or hot holding, Potentially Hazardous Foods (PHFs) shall be cooled rapidly from 135°F to 70°F within 2 hours and from 70°F to 41°F within 4 hours. Approved cooling methods include: 1) Placing the food in shallow pans 2) Separating the food into thinner or smaller portions. 3) Using rapid cooling equipment (Ex. blast chiller) 4) Using containers that facilitate heat transfer (ex. stainless steel) 5) Adding ice as an ingredient. 6) Using ice paddles 7) Using an ice bath and stirring frequently 8) Accordance with a HACCP plan. Cooling foods shall have enough space around the containers for cold air to circulate, be loosely covered, or uncovered and stirred as frequently needed to evenly cool.
[COS] Items were discarded. See VC&D report.
3. Rice was found cooling on metro shelves in 4" deep hotel pans. Rice meaured between 100-130F after 1 hour of cooling.
[CA] Properly cool PHF's using shallow containers, using no more than 2 inches for solid foods and no more than 3 inches for liquids.
[COS] Rice was transferred to several sheet trays and placed into a speed rack in the walk in cooler.
Note: Staff were unsure to who the speed rack belonged to and elected to use it. Ensure to provide and use the facility's own equipment. - Menor Problemas de limpieza o desinfección
