El personal no se lavaba las manos cuando debía, o un lavamanos estaba bloqueado, sin jabón ni toallas de papel, o se usaba para otra cosa. Las manos son una de las formas más comunes en que los gérmenes llegan a la comida.

[CA]: All hand sink stations shall be in good repair.
2. At the same hand sink mentioned above, paper towel dispenser is not properly working.

Los platos, equipos o superficies que tocan los alimentos no se lavaban, enjuagaban y desinfectaban correctamente, o el desinfectante no tenía la concentración adecuada. Las superficies limpias ayudan a evitar que los gérmenes lleguen a la comida.

[CA]: Wiping cloths used for sanitizing work surfaces must be stored inside their sanitizer buckets containing at least 100ppm chlorine or 200ppm Quat sanitizer when not actively being used.
[COS]: PIC placed wiping cloth in sanitizer bucket with 200 ppm of Quat sanitizer.
2 oct 2024 · Routine Inspection - Crítica Alimentos a una temperatura insegura
Los alimentos no se mantenían lo suficientemente fríos o calientes, no se enfriaban con la rapidez necesaria, o no se cocinaban o recalentaban a la temperatura correcta. Las bacterias crecen rápido en la "zona de peligro" entre 41 °F y 135 °F (5 °C a 57 °C), por lo que esta es una de las revisiones de seguridad alimentaria más importantes.

Nota del inspector (en inglés): At the hot holding display case, mashed potatoes measured at 118F, gravy measured at 116F, and ribs measured at 119F. Per Staff, food items were cooked and relocated to unit approximately 2 hours prior to measurement.
[CA]: Potentially Hazardous Food (PHFs) shall be hot held at 135F or above at all times.
[COS]: Specialist instructed staff to reheat PHFs to at least 165F for 15 seconds prior to hot holding at 135F. Staff adjusted/increased heat settings of unit.
