Specialist directed facility to avoid the use of 3-compartment sink and use the mechanical dishwasher until sink is repaired. Clean and sanitize affected areas.

No active dishwashing was occuring at the 3-compartment sink. [CA] Quaternary ammonia must measure 150 - 400ppm for manual warewashing.
