Los alimentos no se mantenían lo suficientemente fríos o calientes, no se enfriaban con la rapidez necesaria, o no se cocinaban o recalentaban a la temperatura correcta. Las bacterias crecen rápido en la "zona de peligro" entre 41 °F y 135 °F (5 °C a 57 °C), por lo que esta es una de las revisiones de seguridad alimentaria más importantes.

Nota del inspector (en inglés): Measured onion rings placed in warming drawer at 110F. Per employee, onion rings were cooked less than 30 minutes prior to temperature measurement. The warming drawer was not turned on. [CA] Potentially Hazardous Foods shall be kept at 41F or below or 135F or above. [COS] Onion rings will be served within game service, or within 4 hours from time of initial removal from temperature. The warming drawer was turned on during inspection.
