Los alimentos no se mantenían lo suficientemente fríos o calientes, no se enfriaban con la rapidez necesaria, o no se cocinaban o recalentaban a la temperatura correcta. Las bacterias crecen rápido en la "zona de peligro" entre 41 °F y 135 °F (5 °C a 57 °C), por lo que esta es una de las revisiones de seguridad alimentaria más importantes.

Nota del inspector (en inglés): Observed PHFs in the food prep cold hold unit that measured in the temperature danger zone (various meats 44F-45F). [CA] Ensure PHFs are properly cold held at 41F or below OR hot held at 135F or above. Adjust, repair or replace unit if necessary to ensure it can hold PHFs at 41F or below. [COS] PIC stated the PHFs have been in the unit for 1 hour and will use time marking until the unit can be repaired (4 hours maximum and PHFs from the unit must be discarded).
