Manager stated that the employee had likely forgotten to cool the two containers of pasta to 41F prior to placement into the walk-in cooler. [CA] After heating or hot holding, Potentially Hazardous Foods (PHFs) shall be cooled rapidly from 135°F to 70°F within 2 hours and from 70°F to 41°F within 4 hours. Approved cooling methods include: 1) Placing the food in shallow pans 2) Separating the food into thinner or smaller portions. 3) Using rapid cooling equipment (Ex. blast chiller) 4) Using containers that facilitate heat transfer (ex. stainless steel) 5) Adding ice as an ingredient. 6) Using ice paddles 7) Using an ice bath and stirring frequently 8) Accordance with a HACCP plan. Cooling foods shall have enough space around the containers for cold air to circulate, be loosely covered, or uncovered and stirred as frequently needed to evenly cool. [COS] Pasta was placed into ice baths to facilitate rapid cooling.

Facility's thermometer placed inside the top left drawer unit measured 53F. *NOTE: Equipment MUST be capable of maintaining potentially hazardous foods (PHF) at or below 41F, regardless of surrounding ambient air temperature. [CA] PHF shall be held at or below 41F, OR at or above 135F to prevent the growth of harmful bacteria. [COS] All PHF listed within the unit VC&D, except for the raw shell eggs. See VC&D report. Raw shell eggs relocated to the walk-in cooler. Facility shall use the other available working prep and under-counter refrigeration units while they await a fridge tech who can fix the currently non-functional unit. 2.
